No-Bake Cheesecake

INGREDIENTS |
- 1 (8-ounce) package cream cheese

1 (12-ounce) can evaporated milk

1 cup sugar

1 teaspoon vanilla

1 (6-ounce) box lime gelatin

1 cup boiling water
-
1/2 cup ice water
-
1 (20-ounce) can crushed pineapple, undrained

Crust:
-
1 stick butter or margarine
-
1 stack graham crackers
-
2 tablespoons sugar

INSTRUCTIONS |
Crush graham crackers and reserve 2 tablespoons. Mix remaining crumbs with melted butter and 2 tablespoons sugar. Press into a 9-x-13-inch pan to form crust. Chill. In a large mixing bowl, cream sugar and cream cheese until smooth. Add vanilla and slowly stir in milk; mix well. In a small bowl, dissolve gelatin in boiling water. Stir in ice water to cool slightly. Add to cream cheese mixture; mix well. Stir in pineapple by hand. Pour into crust and sprinkle with reserved graham cracker crumbs. Chill six hours or overnight. Yield: 18-20 servings.
