Appetizers - Spinach Balls



INGREDIENTS
  • 2 cups frozen chopped spinach
  • 2 cups herb stuffing mix
  • 1 can water chestnuts, chopped
  • 2 eggs, beaten
  • 3/4 cup butter or margarine, melted
  • 1/2 cup Parmesan cheese
  • 1 tablespoon garlic salt
  • 1/2 teaspoon thyme
  • 1/2 tablespoon pepper
  • Dash hot sauce

INSTRUCTIONS
Cook spinach and drain well. Mix all ingredients. Shape into one-inch balls. Place on ungreased cookie sheet. Chill for a couple of hours before baking. (Can also be frozen for future use; drop into plastic bags when hard and keep in freezer.)

Bake at 350° F. for 20 minutes. Drain on paper towels and serve warm. Makes 60 to 70, depending on size.
