Vegetable Relish

INGREDIENTS |
- 8 large carrots

12 white onions

12 large sweet red peppers

12 large sweet green peppers

2 large heads cabbage

3/4 cup salt
-
1 1/2 quarts vinegar
-
6 cups sugar
-
3 tablespoons mustard seed
-
3 tablespoons celery seed
-
1/2 teaspoon red pepper

INSTRUCTIONS |
Peel carrots and onions and seed peppers. Finely chop all vegetables together. Add salt; allow mixture to stand for three hours. Drain well. Dissolve sugar into vinegar; add to drained vegetables along with seasonings. Pack into clear jars; cover well with liquid and seal. No cooking required. Note: This recipe is from a cookbook that came with a Home Comfort cookstove that we bought in 1951. |
