Orange Roughy Bundles

INGREDIENTS |
- 4 (6-ounce) fresh or frozen orange roughy fillets (flounder or sole fillets can be used)

1/4 cup grated Parmesan cheese

1/4 teaspoon cayenne pepper

2 medium zucchini (cut into 1/4-inch slices)

1 small sweet red pepper, cut into narrow strips

1/2 teaspoon salt

INSTRUCTIONS |
Place each fillet on a separate 12-inch-square piece of heavy-duty foil. Sprinkle with Parmesan cheese and cayenne pepper. Top with zucchini, red pepper strips, and salt. Fold foil over vegetables and seal tightly. Grill covered over indirect heat for eight to 10 minutes or until fish flakes easily with a fork. |
