Orange Roughy Bundles

Ingredients
- 4 (6-ounce) fresh or frozen orange roughy fillets (flounder or sole fillets can be used)

1/4 cup grated Parmesan cheese

1/4 teaspoon cayenne pepper

2 medium zucchini (cut into 1/4-inch slices)

1 small sweet red pepper, cut into narrow strips

1/2 teaspoon salt
Instructions
Place each fillet on a separate 12-inch-square piece of heavy-duty foil. Sprinkle with Parmesan cheese and cayenne pepper. Top with zucchini, red pepper strips, and salt.
