Hidden Pear Salad

INGREDIENTS |
- 2 (16-ounce) cans pears

1 large box lime gelatin

1 (8-ounce) package cream cheese, softened

1/2 teaspoon lemon juice

1 (8-ounce) container whipped topping, thawed

INSTRUCTIONS |
Drain pears, reserving liquid. Bring pear juice to a boil; dissolve gelatin in boiling juice. Cool at room temperature. Puree pears in a blender. Beat cream cheese and lemon juice until fluffy. Add pears, mixing well. Fold in whipped topping and pear-gelatin mixture. Pour into a nine-inch square dish or mold of your choice. Refrigerate overnight. Note: You can make this dessert for diabetics by using sugar-free and low-fat ingredients. |
