Berried Treasure Puffs

INGREDIENTS |
- 1 (18-ounce) can sweet potatoes

1(8 3/4-ounce) can crushed pineapple, drained

1 egg

2 tablespoons melted butter

1/2 teaspoon salt

Dash of pepper

1/4 teaspoon nutmeg

1/2 cup whole cranberry sauce
-
8 tablespoons whole cranberry sauce

INSTRUCTIONS |
Whip together sweet potatoes, crushed pineapple, egg, butter, salt, dash of pepper, and nutmeg. Swirl in 1/2 cup whole cranberry sauce. Spoon into eight greased ramekins (individual baking dishes.) Top each with 1 tablespoon whole cranberry sauce. Bake at 375° for 40 minutes. Yield: Eight servings. |
