Recipe of the Month Desserts - Berried Treasure Puffs



INGREDIENTS
  • 1 (18-ounce) can sweet potatoes
  • 1(8 3/4-ounce) can crushed pineapple, drained
  • 1 egg
  • 2 tablespoons melted butter
  • 1/2 teaspoon salt
  • Dash of pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup whole cranberry sauce
  • 8 tablespoons whole cranberry sauce

INSTRUCTIONS
Whip together sweet potatoes, crushed pineapple, egg, butter, salt, dash of pepper, and nutmeg. Swirl in 1/2 cup whole cranberry sauce.
Spoon into eight greased ramekins (individual baking dishes.) Top each with 1 tablespoon whole cranberry sauce. Bake at 375° for 40 minutes.
Yield: Eight servings.
