Lemon-Cream Cheese Cupcakes

INGREDIENTS |
- 1 package regular white cake mix

1 (3.4 ounce) package Jell-O lemon instant pudding

1 cup water
-
4 egg whites
-
2 tablespoons oil

1 (8 ounce) cream cheese, softened

1/4 cup butter, softened

2 tablespoons lemon juice (zest lemon is best)

1 (16 ounce) package

powdered sugar

INSTRUCTIONS |
Preheat oven to 350ยบ. Beat first five ingredients in large bowl on low speed about 1 minute. Then beat on medium speed about 2 minutes. Spoon into 24 paper-lined muffin cups. Bake 21-24 minutes. Cool in pan for 10 minutes. Remove and cool completely. Icing: Beat cream cheese, butter, and lemon juice with mixer until well blended. Gradually add sugar, beating well after each addition. Add lemon zest and stir. Spread onto cupcakes. |
