Desserts - Lemon-Cream Cheese Cupcakes

  • 1 package regular white cake mix
  • 1 (3.4 ounce) package Jell-O lemon instant pudding
  • 1 cup water
  • 4 egg whites
  • 2 tablespoons oil
  • 1 (8 ounce) cream cheese, softened
  • 1/4 cup butter, softened
  • 2 tablespoons lemon juice (zest lemon is best)
  • 1 (16 ounce) package
  • powdered sugar

Preheat oven to 350ยบ. Beat first five ingredients in large bowl on low speed about 1 minute. Then beat on medium speed about 2 minutes. Spoon into 24 paper-lined muffin cups. Bake 21-24 minutes. Cool in pan for 10 minutes. Remove and cool completely.
Beat cream cheese, butter, and lemon juice with mixer until well blended. Gradually add sugar, beating well after each addition. Add lemon zest and stir. Spread onto cupcakes.
