Cream of Vegetable Soup

INGREDIENTS |
- 1 medium onion, chopped

1/2 cup butter

1/2 cup flour
-
4 cups chicken broth
-
4 cups milk
-
1 teaspoon dried basil

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon garlic powder

5 cups chopped, cooked mixed vegetables (such as broccoli, potatoes, cauliflower, and carrots)

Processed cheese to taste, optional

INSTRUCTIONS |
In a large kettle, sauté onion in butter until tender. Add flour; cook and stir until thickened. Stir in broth, milk, basil, salt, pepper, and garlic powder. Add vegetables; cook gently until heated through. Stir in cheese, if desired. Yield: 3 quarts. |
