Cream of Vegetable Soup

Ingredients

  • 1 medium onion, chopped
  • 1/2 cup butter
  • 1/2 cup flour
  • 4 cups chicken broth
  • 4 cups milk
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 5 cups chopped, cooked mixed vegetables (such as broccoli, potatoes, cauliflower,
  • and carrots)
  • Processed cheese to taste, optional
  • Instructions


    In a large kettle, sauté onion in butter until tender. Add flour; cook and stir until thickened. Stir in broth, milk, basil, salt, pepper, and garlic powder. Add vegetables; cook gently until heated through. Stir in cheese, if desired.
    Yield: 3 quarts.
