Desserts - Cheesecake Tarts



INGREDIENTS
  • 2 (8-ounce) packages cream cheese, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 tablespoon lemon juice
  • Vanilla wafers, crushed
  • 1 can cherry pie filling

INSTRUCTIONS
Cream the cream cheese and sugar. Add eggs, vanilla, and lemon juice and blend. Place equal amounts of vanilla wafer crumbs in paper-lined cupcake tins. Pour cream cheese filling into tins. Bake at 375ยบ for 20 minutes. Cool. Top with cherry pie filling. Refrigerate.
Yield: 18-20 tarts.
