Appetizers - Greek Stuffed Mushrooms



INGREDIENTS
  • 24 large mushroom caps
  • 10 ounces frozen chopped spinach, thawed
  • 1/2 cup Parmesan cheese, shredded
  • 4 ounces Feta cheese, crumbled
  • 1/2 cup green onion, chopped
  • 1/2 cup parsley, chopped
  • Pinch salt

INSTRUCTIONS
Press out liquid from spinach. Rinse off brine from Feta cheese. Combine all ingredients and mix well. Stuff mixture into each mushroom cap. Microwave on high for 3 to 4 minutes or bake in oven at 350°F for 15 to 20 minutes.
