Greek Stuffed Mushrooms

INGREDIENTS |
- 24 large mushroom caps

10 ounces frozen chopped spinach, thawed

1/2 cup Parmesan cheese, shredded

4 ounces Feta cheese, crumbled

1/2 cup green onion, chopped

1/2 cup parsley, chopped
-
Pinch salt

INSTRUCTIONS |
Press out liquid from spinach. Rinse off brine from Feta cheese. Combine all ingredients and mix well. Stuff mixture into each mushroom cap. Microwave on high for 3 to 4 minutes or bake in oven at 350°F for 15 to 20 minutes. |
