Southwest Pasta Salad

INGREDIENTS |
- 8 ounces dry rotelle (wagon wheel) pasta, uncooked

1 (15-ounce) can ranch-style black beans, drained and rinsed

1 (10-ounce) can Ro-Tel tomatoes, undrained

1 cup reduced-fat sour cream

1/2 cup chopped green bell pepper

1/4 cup chopped red onion
-
1/2 cup shredded reduced-fat Cheddar cheese

INSTRUCTIONS |
Cook pasta according to package directions. Drain; rinse under cold water until cool. Set aside. Meanwhile, stir together beans, undrained tomatoes, sour cream, pepper, and onion in large bowl. Add pasta and cheese; toss to combine. Serve at room temperature. |
