Rosy Pear Compote

INGREDIENTS |
- 6 firm ripe pears, peeled, cored, and quartered

1 (16-ounce) can whole-berry cranberry sauce

1/4 cup sugar

1 tablespoon lemon juice

1/4 teaspoon ground cinnamon

1/4 teaspoon ground ginger

2 navel oranges, peeled, cut into 8 slices, and halved

INSTRUCTIONS |
Arrange pears in a 13-x-9-x-2-inch baking dish coated with non-stick cooking spray. In a saucepan, combine cranberry sauce, sugar, lemon juice, and spices. Cook until mixture boils; pour over pears. Top with oranges. Cover and bake at 350ยบ for 30-35 minutes. Serve warm. |
