INGREDIENTS |
- 3 tablespoons butter

1 cup chopped celery

3 tablespoons chopped

shallots or green onions

2 cups whole milk

2 cups half-and-half

2 cups (8 ounces) freshly shucked oysters, undrained

1 teaspoon Worcestershire sauce

1/2 teaspoon salt

1 teaspoon coarsely ground black pepper

1/8 teaspoon cayenne pepper

INSTRUCTIONS |
Melt butter in a saucepan. Add celery and shallots or green onions; cook until tender. Add milk and half-and-half; cook until almost boiling. Add oysters and heat until they curl at their edges. Add Worcestershire sauce, salt, pepper, and cayenne pepper. Turn off heat. Serve with oyster crackers. |
