Oyster Stew

Ingredients

  • 3 tablespoons butter
  • 1 cup chopped celery
  • 3 tablespoons chopped
  • shallots or green onions
  • 2 cups whole milk
  • 2 cups half-and-half
  • 2 cups (8 ounces) freshly shucked oysters, undrained
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1 teaspoon coarsely ground black pepper
  • 1/8 teaspoon cayenne pepper
  • Instructions


    Melt butter in a saucepan. Add celery and shallots or green onions; cook until tender. Add milk and half-and-half; cook until almost boiling. Add oysters and heat until they curl at their edges. Add Worcestershire sauce, salt, pepper, and cayenne pepper. Turn off heat. Serve with oyster crackers.
