Herbed Garlic Potatoes

INGREDIENTS |
- 2 pounds small red potatoes

1/3 cup butter
-
2 tablespoons minced fresh or dried chives

1 1/2 teaspoons minced fresh tarragon or 1/2 teaspoon dried tarragon

1/4 cup minced fresh parsley
-
2 to 3 garlic cloves, minced

1/2 to 1 teaspoon salt
-
1/4 teaspoon ground pepper
-
3 bacon strips, cooked and crumbled

INSTRUCTIONS |
Cut potatoes in half and place in a saucepan; cover with water. Cover and cook until tender, about 20 minutes. Drain well. In a large skillet, melt butter. Add chives, tarragon, parsley, and garlic. Cook and stir over low heat for one to two minutes. Add potatoes, salt, pepper, and bacon; toss to coat. Cook until heated through, about five minutes. |
