Frozen Christmas Pudding

INGREDIENTS |
- 1 cup crushed pineapple

1/2 cup maraschino cherries

1/2 cup raisins

2 cups miniature marshmallows

1/3 cup chopped almonds, toasted

2 teaspoons rum flavoring

1 tablespoon grated lemon peel

2 tablespoons lemon juice
-
2 egg whites
-
1/2 teaspoon salt

1/3 cup sugar
-
1/3 cup heavy cream, whipped

INSTRUCTIONS |
Drain pineapple and cherries, reserving syrup. Chop cherries. Combine syrup and raisins. Heat to boiling and add marshmallows; stir until smooth; cool. Add pineapple, cherries, almonds, flavoring, lemon peel, and lemon juice. Combine egg whites and salt; beat until foamy; gradually add sugar and beat to a stiff peak. Fold into mixture. Fold in whipped cream. Freeze. Yield: 8 servings.
