Frozen Christmas Pudding

Ingredients

  • 1 cup crushed pineapple
  • 1/2 cup maraschino cherries
  • 1/2 cup raisins
  • 2 cups miniature marshmallows
  • 1/3 cup chopped almonds, toasted
  • 2 teaspoons rum flavoring
  • 1 tablespoon grated lemon peel
  • 2 tablespoons lemon juice
  • 2 egg whites
  • 1/2 teaspoon salt
  • 1/3 cup sugar
  • 1/3 cup heavy cream, whipped
  • Instructions


    Drain pineapple and cherries, reserving syrup. Chop cherries. Combine syrup and raisins. Heat to boiling and add marshmallows; stir until smooth; cool. Add pineapple, cherries, almonds, flavoring, lemon peel, and lemon juice. Combine egg whites and salt; beat until foamy; gradually add sugar and beat to a stiff peak. Fold into mixture. Fold in whipped cream. Freeze.
    Yield: 8 servings.
