Peppermint Candy Cake

INGREDIENTS |
- 1 butter-flavor cake mix

1/2 cup crushed peppermint candy

4 eggs

3/4 cup oil
-
1 (8-ounce) container sour cream
|
INSTRUCTIONS |
Combine all ingredients and beat with electric mixer until smooth. Pour into three greased-and-floured 9-inch cake pans and bake at 350º for 20 minutes. Frosting: 1 cup sugar 1 cup crushed peppermint candy 1/3 cup water teaspoon cream of tartar Dash of salt 3 egg whites In a saucepan, mix sugar, cup peppermint candy, water, cream of tartar, and salt; cook, covered, for three minutes. Remove cover and cook until syrup strings when spoon is dipped into it. While syrup is cooking, beat three egg whites in a bowl. Pour hot syrup mixture into egg whites, beating constantly. When mixture will make a peak, add another cup of crushed peppermint candy; beat to mix. Spread icing between layers and on top and sides of cake. Note: It’s better if cake “sets” one day before being served.
