3 egg whites
In a saucepan, mix sugar, cup peppermint candy, water, cream of tartar, and salt; cook, covered, for three minutes. Remove cover and cook until syrup strings when spoon is dipped into it.
While syrup is cooking, beat three egg whites in a bowl. Pour hot syrup mixture into egg whites, beating constantly. When mixture will make a peak, add another cup of crushed peppermint candy; beat to mix. Spread icing between layers and on top and sides of cake.
