Rice and Pasta -
Five-Toe Garlic Rice

INGREDIENTS |
- 2 tablespoons butter

1 cup long-grain white rice

2 cups water

2 chicken bouillon cubes

1 cup chopped onion

1/2 cup chopped celery
-
1/2 cup chopped bell pepper

1 cup chopped fresh tomatoes

1/4 cup chopped parsley
-
1/2 cup chopped banana pepper

1/2 cup chopped green onions
-
5 medium toes garlic, minced(3 tablespoons)

1/2 teaspoon salt
-
1/4 teaspoon pepper
-
1/8 teaspoon sugar

INSTRUCTIONS |
Combine butter, rice, water, and bouillon cubes in a microwave-safe, 2-quart casserole dish. Microwave, uncovered, on highest setting for 15 minutes. Add remaining ingredients and microwave on high for an additional 10 minutes. Note: Microwave power may vary, so adjust time if vegetables are not tender enough to suit your taste. Adjust salt and pepper to taste. For a richer-tasting dish, add 1 cups shredded sharp Cheddar cheese and return to microwave for three minutes or until cheese is melted.
