Combine butter, rice, water, and bouillon cubes in a microwave-safe, 2-quart casserole dish. Microwave, uncovered, on highest setting for 15 minutes. Add remaining ingredients and microwave on high for an additional 10 minutes.
Note: Microwave power may vary, so adjust time if vegetables are not tender enough to suit your taste. Adjust salt and pepper to taste. For a richer-tasting dish, add 1 cups shredded sharp Cheddar cheese and return to microwave for three minutes or until cheese is melted.
