Broccoli Stir-Fry with Shrimp

INGREDIENTS |
- 2 teaspoons finely chopped peeled ginger

1 large clove garlic, minced

4 cups small broccoli florets (about 10 ounces)

1 large red pepper, diced

1 pound medium shrimp, peeled and deveined

1/4 cup fat-free chicken broth
-
2 tablespoons light soy sauce

1/8 teaspoon dark Oriental sesame oil

2 cups hot cooked brown or white rice

INSTRUCTIONS |
Coat a large nonstick skillet with cooking spray; heat over high heat. Add ginger and garlic; stir one minute or until fragrant. Add broccoli and red pepper; stir-fry for two minutes. Add shrimp, broth, soy sauce, and sesame oil. Cook, stirring often, four to five minutes or until shrimp is cooked thoroughly. Serve over rice. Yield: Four servings.
