Captain Jack Chili

INGREDIENTS |
- 4 slices bacon, diced

1 medium onion, diced

1 green pepper, diced

2 (1-pound) cans red kidney beans

1 (3 1/2-ounce) can tomato paste

2 tablespoons chili powder

1/2 teaspoon salt

1/2 teaspoon pepper

1/2 pound sharp Cheddar cheese, grated

5 hot dogs, sliced

INSTRUCTIONS |
Fry bacon until crisp. Remove to a paper towel to drain. Cook onion and pepper in remaining fat until soft. Add remaining ingredients. Cover and simmer for 15 minutes. Yield: 1 quarts. |
