Captain Jack Chili

Ingredients

  • 4 slices bacon, diced
  • 1 medium onion, diced
  • 1 green pepper, diced
  • 2 (1-pound) cans red kidney beans
  • 1 (3 1/2-ounce) can tomato paste
  • 2 tablespoons chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 pound sharp Cheddar cheese, grated
  • 5 hot dogs, sliced
  • Instructions


    Fry bacon until crisp. Remove to a paper towel to drain. Cook onion and pepper in remaining fat until soft. Add remaining ingredients. Cover and simmer for 15 minutes.
    Yield: 1 quarts.
