Sweet Potato Stuffing

INGREDIENTS |
- 1/2 cup chopped celery

1/2 cup chopped onion

1/4 cup butter or margarine

6 cups dry bread cubes

1 large sweet potato, peeled, cooked, and finely chopped

1/2 cup chicken broth

1/2 cup chopped pecans
-
1/2 teaspoon poultry seasoning

1/2 teaspoon salt
-
1/2 teaspoon rubbed sage

1/2 teaspoon pepper

INSTRUCTIONS |
In a skillet, sauté celery and onion in butter until tender. Add remaining ingredients; toss gently. Transfer to a larger cooking pan. Bake at 350° until bread and vegetables are soft. Yield: 10 servings. |
