Sweet Potato Stuffing

Ingredients

  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1/4 cup butter or margarine
  • 6 cups dry bread cubes
  • 1 large sweet potato, peeled, cooked, and finely chopped
  • 1/2 cup chicken broth
  • 1/2 cup chopped pecans
  • 1/2 teaspoon poultry seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon rubbed sage
  • 1/2 teaspoon pepper
  • Instructions


    In a skillet, sauté celery and onion in butter until tender. Add remaining ingredients; toss gently. Transfer to a larger cooking pan. Bake at 350° until bread and vegetables are soft.
    Yield: 10 servings.
