Poultry and Eggs -
Western Omelette

INGREDIENTS |
- 2 tablespoons butter or margarine

1/4 cup chopped green pepper
-
1/4 cup chopped celery
-
1/4 cup chopped onion
-
4 eggs
-
2 tablespoons water
-
1/4 cup finely chopped ham

INSTRUCTIONS |
In a frying pan, melt butter over medium heat. Sauté pepper, celery, and onion for three minutes. Whisk together eggs and water; add ham. Pour egg mixture into pan and cook for three to four minutes or until set. Fold over omelette and cut in half. Serve with toast and sliced tomatoes. |
