Pumpkin Cranberry Bread

INGREDIENTS |
- 1 1/2 cups all-purpose flour

1/2 tablespoon pumpkin pie spice

3/4 teaspoon salt

1 teaspoon baking soda

1 1/2 cups granulated sugar

1/2 (15-ounce) can pumpkin
-
2 large eggs
-
1/2 cup vegetable oil
-
1/4 cup orange juice
-
1/2 cup sweetened cranberries, dried, fresh, or frozen

INSTRUCTIONS |
Preheat oven to 350°. Grease and flour a 9-x-5-inch loaf pan. Combine flour, pumpkin pie spice, baking soda, and salt in a large bowl. Combine sugar, pumpkin, egg, oil, and orange juice in a large bowl; beat until blended. Add pumpkin mixture to flour mixture; stir until moistened. Fold in cranberries. Spoon batter into loaf pan. Bake for 60 to 65 minutes. Cool in pan for 10 minutes. Remove to wire rack to cool completely. |
