Pumpkin Cranberry Bread

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tablespoon pumpkin pie spice
  • 3/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 cups granulated sugar
  • 1/2 (15-ounce) can pumpkin
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup orange juice
  • 1/2 cup sweetened cranberries, dried, fresh, or frozen
  • Instructions


    Preheat oven to 350°. Grease and flour a 9-x-5-inch loaf pan. Combine flour, pumpkin pie spice, baking soda, and salt in a large bowl. Combine sugar, pumpkin, egg, oil, and orange juice in a large bowl; beat until blended. Add pumpkin mixture to flour mixture; stir until moistened. Fold in cranberries.
    Spoon batter into loaf pan. Bake for 60 to 65 minutes. Cool in pan for 10 minutes. Remove to wire rack to cool completely.
