Pineapple Cookies

INGREDIENTS |
- 1 cup white sugar

1 cup brown sugar

1 cup shortening
-
2 eggs
-
1 cup chopped nuts

4 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon vanilla
-
1 large can crushed pineapple, drained and liquid reserved

Powdered sugar (optional)

INSTRUCTIONS |
Cream sugar, shortening, and eggs; add vanilla. Combine dry ingredients and add to creamed mixture. Add nuts and gently fold in pineapple. Drop by teaspoonfuls on a greased cookie sheet. Bake at 350° for 10 to 12 minutes. If desired, combine pineapple juice and enough powdered sugar to make icing of a desired consistency; spread on hot cookies. |
