Pancakes and Waffles -
Apple, Potato, and Sausage Waffles

INGREDIENTS |
- 1 1/2 cups flour

2 teaspoons baking powder

1/4 teaspoon salt

1 cup water
-
3 large eggs, separated
-
2 tablespoons butter, melted

6 ounces pork or turkey sausage, cooked and crumbled

1/2 cup potatoes, peeled, cooked, and finely chopped

1/2 cup apple, peeled and grated

INSTRUCTIONS |
Combine flour, baking powder, and salt in a bowl. Whisk together water, egg yolks, and butter. Pour into dry ingredients, stirring with a few quick strokes to form a lumpy batter. Stir in sausage, potatoes, and apples. Place egg whites in medium-size bowl and beat until stiff. Using a rubber spatula, gently fold egg whites into batter. Spoon onto hot, greased waffle iron. Cook until done. Serve with apple slices, butter, and honey. |
