Something Special Sweet Potatoes

INGREDIENTS |
- 1 (23-ounce) can sweet potatoes, drained

1/2 cup brown sugar, firmly packed

1/2 cup crushed pineapple, well drained

1/2 cup prunes, quartered and pitted

1/4 teaspoon salt
-
1 teaspoon orange rind, grated (optional)

2 tablespoons margarine or butter

1/4 to 1/2 cup almonds, slivered

INSTRUCTIONS |
Drain sweet potatoes and blot on paper towels. In a small bowl, combine brown sugar, pineapple, prunes, salt, and orange rind. Place sweet potatoes in a one-quart casserole dish. Spread fruit mixture and sprinkle with almonds. Bake at 350° for 40 to 45 minutes. Yield: Six servings. |
