Asian Pork Burgers

INGREDIENTS |
- 1½ pounds ground pork

1 egg, beaten

1 tablespoon fish sauce

2 teaspoons minced garlic

2 teaspoons soy sauce

2 teaspoons ground ginger

1 teaspoon grated lime zest

1 teaspoon lime juice
-
3 scallions, thinly sliced
-
½ cup chopped cilantro
-
2 tablespoons canola or vegetable oil

INSTRUCTIONS |
Mix all ingredients except oil very thoroughly. If the mixture is too soft to make patties, add some panko bread crumbs to make the mixture more firm. Make 4 thick patties. Put oil in a heavy skillet and cook patties 12-14 minutes on medium-high heat. Turn once or twice until done (160ยบ on meat thermometer). Serve with a spicy mayonnaise (buy one or make your own with mayo plus a little Sriracha sauce). |
