Asian Pork Burgers

Ingredients

  • 1½ pounds ground pork
  • 1 egg, beaten
  • 1 tablespoon fish sauce
  • 2 teaspoons minced garlic
  • 2 teaspoons soy sauce
  • 2 teaspoons ground ginger
  • 1 teaspoon grated lime zest
  • 1 teaspoon lime juice
  • 3 scallions, thinly sliced
  • ½ cup chopped cilantro
  • 2 tablespoons canola or vegetable oil
  • Instructions


    Mix all ingredients except oil very thoroughly. If the mixture is too soft to make patties, add some panko bread crumbs to make the mixture more firm.
    Make 4 thick patties. Put oil in a heavy skillet and cook patties 12-14 minutes on medium-high heat. Turn once or twice until done (160º on meat thermometer).
    Serve with a spicy mayonnaise (buy one or make your own with mayo plus a little
    Sriracha sauce).
