Poultry and Eggs -
Chicken Pizzarella

INGREDIENTS |
- 2 pounds chicken strips
-
Garlic salt and freshly ground pepper to taste

1 (8-ounce) can plain tomato sauce

1 (4-ounce) can mushrooms, undrained

2 tablespoons onion, minced
-
1/2 teaspoon oregano or Italian seasoning

1 cup (4 ounces) part-skim mozzarella cheese, shredded

INSTRUCTIONS |
Spray a shallow baking dish with non-stick spray and arrange chicken in dish. Sprinkle garlic salt and pepper on chicken. Combine all other ingredients, except cheese, and pour over chicken. Bake, uncovered, at 350° for 35 minutes or until chicken is tender. Sprinkle with cheese and return to oven. Bake an additional five minutes or until cheese is melted. Yield: Eight servings. Note: This is great served over penne pasta. |
