Italian Strata

INGREDIENTS |
- 1 1/2 pounds mild Italian sausage

1 pound zucchini, sliced

1/2 pound fresh spinach, torn into bite-size pieces

1 onion, thinly sliced

1 teaspoon dry mustard

1 teaspoon salt

1/2 teaspoon freshly ground pepper

2 cups cheddar cheese, grated

2 cups Swiss cheese, grated

1 1/2 cups milk
-
7 eggs
-
10 slices white bread, torn

INSTRUCTIONS |
Cook sausage and drain. Sauté zucchini, spinach, and onion in sausage drippings. In a large bowl, combine sausage, zucchini mixture, mustard, salt, pepper, cheeses, milk, eggs, and bread. Mix well. Cover and refrigerate overnight. Preheat oven to 325°. Mix ingredients again and place in a greased 9-x-13-inch baking dish. Bake for 1 1/2 hours; watch closely during last 30 minutes because strata tends to brown quickly. Full baking time may not be necessary, but make sure mixture is set before removing from oven. Yield: Eight to 12 servings. |
