2 cups Swiss cheese, grated
1 1/2 cups milk

Cook sausage and drain. Sauté zucchini, spinach, and onion in sausage drippings. In a large bowl, combine sausage, zucchini mixture, mustard, salt, pepper, cheeses, milk, eggs, and bread. Mix well. Cover and refrigerate overnight.
Preheat oven to 325°. Mix ingredients again and place in a greased 9-x-13-inch baking dish. Bake for 1 1/2 hours; watch closely during last 30 minutes because strata tends to brown quickly. Full baking time may not be necessary, but make sure mixture is set before removing from oven. Yield: Eight to 12 servings.
