Glazed Cranberry Bread

INGREDIENTS |
- 11/2 cups plain flour

1/2 cup whole wheat flour

3/4 cup sugar

11/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon cinnamon

3 tablespoons powdered sugar

1/2 teaspoon ground cloves

1 tablespoon grated orange peel
-
3/4 cup plus 2 tablespoons orange juice

1 egg

2 tablespoons canola oil
-
1 cup cranberries, halved
-
Glaze:
-
3 tablespoons powdered sugar
-
1/4 teaspoon skim milk

INSTRUCTIONS |
Combine dry ingredients. Lightly beat orange peel, orange juice, egg, and oil. Add to dry ingredients, stirring just until moistened; stir in cranberries. Pour into 81/2-inch loaf pan coated with cooking spray. Bake at 350ยบ for 50 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan; cool thoroughly. Combine glaze ingredients and drizzle over bread before serving. |
