Glazed Cranberry Bread

Ingredients

  • 11/2 cups plain flour
  • 1/2 cup whole wheat flour
  • 3/4 cup sugar
  • 11/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 3 tablespoons powdered sugar
  • 1/2 teaspoon ground cloves
  • 1 tablespoon grated orange peel
  • 3/4 cup plus 2 tablespoons orange juice
  • 1 egg
  • 2 tablespoons canola oil
  • 1 cup cranberries, halved
  • Glaze:
  • 3 tablespoons powdered sugar
  • 1/4 teaspoon skim milk
  • Instructions


    Combine dry ingredients. Lightly beat orange peel, orange juice, egg, and oil. Add to dry ingredients, stirring just until moistened; stir in cranberries. Pour into 81/2-inch loaf pan coated with cooking spray. Bake at 350ยบ for 50 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan; cool thoroughly. Combine glaze ingredients and drizzle over bread before serving.
