Cookies and Candy -
Christmas Fruit Bars

INGREDIENTS |
- 1 box yellow cake mix

1 egg

1/3 cup water

1/4 cup oil

1/2 cup chopped nuts

1 cup cut-up mixed candied fruit

1 cup confectioners sugar
-
2 tablespoons milk
-
1 teaspoon lemon juice

INSTRUCTIONS |
Preheat oven to 375º. Empty 1/2 of cake mix into a bowl. Add egg, water, and oil; mix thoroughly by hand or with a mixer at low speed. Blend in remaining cake mix (batter will be thick). Stir in nuts and candied fruit. Spread in a greased 13-x-9-x-2-inch pan. Bake at 375º for 25 to 30 minutes or until it tests done with a toothpick. To make a glaze, blend confectioners sugar, milk, and lemon juice until smooth. Spread glaze on bars while they are warm. |
