Garden Tuna Sandwiches

INGREDIENTS |
- 1 (6-ounce) can water-packed tuna, drained and flaked

2/3 cup peeled, seeded, and chopped cucumbers

1/2 cup shredded carrots

1/4 cup finely chopped green onion

1/4 cup Dijon mustard

1/4 cup fat-free mayonnaise

2 tablespoons fat-free sour cream

1 tablespoon lemon juice

Pepper to taste

4 lettuce leaves

8 slices bread

INSTRUCTIONS |
In a bowl, combine the first nine ingredients. Spread on four slices of bread; top with lettuce and another slice of bread. |
