Fruit-Salad Sandwiches

INGREDIENTS |
- 1/2 cup heavy cream

4 tablespoons mayonnaise or salad dressing

1 tablespoon honey

1 banana
-
1 red apple
-
2 tablespoons chopped walnuts

1 (81/2-ounce) can pineapple tidbits, drained

6 lettuce cups

6 slices buttered toast

INSTRUCTIONS |
In a medium bowl with a rotary beater, beat cream until thick. Add mayonnaise and honey; mix well. Peel banana; cut into chunks. Chop apple coarsely (leaving skin on). Reserve some chopped apple and nuts for top. Add pineapple, banana, and remaining apple and nuts to cream; mix well. Arrange a lettuce cup on each slice of toast. Spoon fruit mixture into lettuce cups. Top with reserved apple and nuts. |
