Zucchini Soufflé

INGREDIENTS |
- 2 pounds zucchini, grated

3 eggs, beaten

1 cup shredded Cheddar cheese

1 cup sour cream
-
1/3 cup milk
-
1/4 cup chopped onions

1 teaspoon salt
-
1 teaspoon dill (optional)

1/2 teaspoon pepper
-
1 stick butter, melted
-
1 packge corn muffin mix or
-
1 cup baking mix (Bisquick)

Parmesan cheese (optional)

INSTRUCTIONS |
Mix all ingredients and pour into a large baking dish. Sprinkle with Parmesan cheese, if desired. Bake, uncovered, at 400° for 50 minutes. |
