Zucchini Soufflé

Ingredients

  • 2 pounds zucchini, grated
  • 3 eggs, beaten
  • 1 cup shredded Cheddar cheese
  • 1 cup sour cream
  • 1/3 cup milk
  • 1/4 cup chopped onions
  • 1 teaspoon salt
  • 1 teaspoon dill (optional)
  • 1/2 teaspoon pepper
  • 1 stick butter, melted
  • 1 packge corn muffin mix or
  • 1 cup baking mix (Bisquick)
  • Parmesan cheese (optional)
  • Instructions


    Mix all ingredients and pour into a large baking dish. Sprinkle with Parmesan cheese, if desired. Bake, uncovered, at 400° for 50 minutes.
