Desserts - Mississippi Mud Cake



INGREDIENTS
  • 2 cups sugar
  • 1 cup oil
  • 4 eggs
  • 1 1/2 cups flour
  • 3 tablespoons vanilla
  • 1 cup chopped nuts
  • 1/3 cup cocoa
  • 1/4 teaspoon salt
  • 1 (7-ounce) jar marshmallow creme or 1 bag marshmallows, melted
  • Frosting:
  • 2 sticks (1 cup) butter
  • 1 box (2 cups) powdered sugar
  • 1/2 cup evaporated milk
  • 1/2 cup cocoa
  • 1 teaspoon vanilla
  • 1 cup chopped nuts

INSTRUCTIONS
For cake, cream together sugar and oil. Add eggs and beat by hand until well mixed. Sift dry ingredients together and add to mixture. Add remaining ingredients and hand-mix well. Pour into a greased 9-x-13-inch pan and bake at 350ยบ for 30 minutes. Spread marshmallow creme or melted marshmallows over cake. Allow cake to cool completely before frosting.
For frosting, melt butter over low heat until soft; add remaining ingredients and mix well. Spread on cake.
