Desserts - Melt-in-Your-Mouth Marshmallows

  • 11/3 cups finely chopped nuts
  • 2 envelopes unflavored gelatin
  • 1 1/4 cups water, divided
  • 2 cups granulated sugar
  • 2 teaspoons vanilla
  • Powdered sugar

Sprinkle 1 cup nuts evenly in9-inch pan; set remainder aside. Combine gelatin and cup water in measuring cup; allow gelatin to soften.
In a 2-quart glass measuring cup with handle, combine remaining cup water and sugar. Microwave on high for five minutes. Stir well until sugar dissolves. Microwave on high for seven to eight minutes or until mixture reaches 234º. Stir in softened gelatin and let stand until slightly cooled (about 130º). Stir in vanilla.
Empty into a large bowl. Beat at high speed with electric mixer until very fluffy and four to five times in volume, about 12 to 15 minutes. Turn into nut-coated pan and sprinkle remaining nuts on top. Let stand at room temperature for several hours until firm and set. Dip a sharp knife in powdered sugar and cut into one-inch squares. Roll sides in nuts remaining in pan.
Yield: about 1 pound.
