Meats & Seafood - Apple-Beef Franks Casserole



INGREDIENTS
  • 2 cups peeled and sliced apples
  • 3 large sweet potatoes, boiled, peeled, and sliced
  • 1 pound beef franks, split lengthwise and halved
  • 1/4 cup firmly packed light brown sugar
  • 1/8 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon fresh lemon juice
  • 1/2 cup buttered soft bread crumbs

INSTRUCTIONS
In a shallow greased casserole dish, alternate layers of apples, sweet potatoes, and franks until half are used. Mix next three ingredients and sprinkle half on casserole. Add remaining apples, potatoes, and franks. Sprinkle with remaining sugar mixture and lemon juice. Top with crumbs, cover, and bake in a preheated 375ยบ oven for 45 minutes. Uncover and bake another 10 minutes. Freeze, if desired, and just heat it up to serve.
Yield: 6 servings.
