Fruits and Vegetables - Cauliflower with Shrimp Sauce



INGREDIENTS
  • 1 medium head cauliflower
  • 1 (10-ounce) can frozen condensed cream of shrimp soup
  • 1/2 cup dairy sour cream
  • 1/4 cup slivered blanched almonds, toasted
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

INSTRUCTIONS
Wash cauliflower and break into florets. Cook, covered, in a small amount of salted, boiling water for 10 to 15 minutes. Drain and place cauliflower in a serving dish.
Heat soup over low heat, stirring frequently. Add sour cream. Cook and stir until hot; season with salt and pepper. Add almonds. Pour over hot cauliflower.
Yield: four to six servings.
